Brussels Sprouts

On the side.

This one is Brussels Sprouts 'our way' with our Little Acre Bacon. ⁠We cooked up a storm one afternoon for our staff and we thought we'd share the recipe with you.

 
 

Ingredients

  • 500g Brussels sprouts

  • 150g Little Acre Bacon

  • Extra virgin olive oil

  • Bunch of parsley

  • 1 lemon

  • Salt

 

Method

  1. Trim Brussels sprouts of outer leaves, blanch in salted water for 2–3 mins, then refresh in ice water.

  2. Cut Brussels sprouts in half, drizzle with a small amount of EVOO, char over charcoal or in a heavy based pan.

  3. Slice bacon into lardons and fry in pan till crispy, then add charred Brussels, juice of one lemon, a good lug of EVOO, and a handful of chopped flat leaf parsley. Season to taste and enjoy!
