Brussels Sprouts

This one is Brussels Sprouts 'our way' with our Little Acre Bacon. We cooked up a storm one afternoon for our staff and we thought we'd share the recipe with you.
Ingredients
500g Brussels sprouts
150g Little Acre Bacon
Extra virgin olive oil
Bunch of parsley
1 lemon
Salt
Method
Trim Brussels sprouts of outer leaves, blanch in salted water for 2–3 mins, then refresh in ice water.
Cut Brussels sprouts in half, drizzle with a small amount of EVOO, char over charcoal or in a heavy based pan.
Slice bacon into lardons and fry in pan till crispy, then add charred Brussels, juice of one lemon, a good lug of EVOO, and a handful of chopped flat leaf parsley. Season to taste and enjoy!
