Recipe: Best Bacon Sando with Heirloom Tomatoes

Sometimes you just feel like a good sandwich. And although this one is simple, using quality ingredients really transforms it from a humble sandwich into a satisfying and delicious meal. This Bacon Sando with Heirloom Tomatoes is one of our faves to make for everyone to enjoy–even the kids.

Ingredients

  • 250g of Little Acre bacon

  • 4 slices of Small World Bakery country loaf (cut lengthways)

  • 2 heirloom tomatoes (thickly sliced)

  • extra virgin olive oil 

  • a clove of garlic (smashed)

  • cultured butter

If you have a charcoal BBQ or a hibachi, this really levels up the flavour of anything you’d usually cook on a gas BBQ (especially bacon).

Method

  1. Slice the bread lengthways and drizzle with EVOO, then rub the sando side with the smashed garlic clove. 

  2. Char the bread on the BBQ to your liking

  3. Add the bacon to the BBQ–when it is almost done, remove the rind to snack on later (or give your dogs a delicious crunchy treat). 

  4. Lash the toasted bread with butter, then stack with bacon and thick slices of tomato. Season with salt pepper and more EVOO… demolish.
