Duck Fat Potatoes

This one's a Casey-Doyle family favourite — Exceptionally delicious potatoes roasted in Little Acre Duck Fat. You can grab our Duck Fat from the Willunga Farmers market each weekend and now at Say Cheese in the Adelaide Central Market. Quack quack!

 

Ingredients

  • 1kg small Dutch Cream or small Sebago potatoes, peeled and halved

  • 100g Little Acre Duck Fat

  • 2 tbsp smashed rosemary leaves

Method

  1. Peel potatoes, then add to pot with cold water. Add salt, bring up to a boil and cook until just beginning to soften. Drain, then rough the edges of the potatoes up in a colander.

  2. Spread potatoes out to dry and cool.

  3. Heat oven to 200°C. Add tray with duck fat to oven, then once hot, add dry potatoes and roast until golden and crispy. Season to taste, and add smashed rosemary.
